Nutty Gorgonzola Apple Rings


Found this super simple snack idea by Better Homes and Gardens. I've made this recipe healthier with just a few changes. I love it as a snack and even as dessert!

INGREDIENTS

2             Apples, any variety works. I prefer Red Delicious apples.
1/2          Lemon, juiced (about 2 tablespoons)
4 oz         Neufchâtel cheese (can be found next to regular cream cheese, has less calories 
               and carbs but, more protein than cream cheese. They taste very similar.) *
2 Tbsp     Honey
1/4 cup   Gorgonzola cheese, crumbled (or any tart cheese)
1 cup       Walnuts, chopped
1 sprig     Thyme or Rosemary, optional, for garnish

DIRECTIONS

1. Core the apples to remove all the seeds. Cut apples horizontally into thin slices, making rings. Brush both sides of each ring with lemon juice; set them aside.

2. In a small bowl, mix the Neufchâtel and honey. Spoon the mixture into a small resealable plastic bag and seal the bag. Snip off a small corner of the bag, just enough to force the mixture out. Pipe the mix onto the apple rings and sprinkle with gorgonzola walnuts. Remove the stem from the thyme or rosemary and sprinkle the leaves on top
as garnish. Serve immediately or cover and chill for up to 2 hours.

2 Tbsp     Honey
1/8 tsp    Cinnamon
1 cup       Walnuts, chopped

1. Core the apples to remove all the seeds. Cut apples horizontally into thin slices, making rings. 

2. Spread the almond butter and drizzle honey over the slices. Sprinkle with cinnamon and walnuts. Serve immediately.
